A typical pahadi staple - Dhabdi is a unique preparation that utilizes all the seosonal green Vegetables and locally grown ingredients
This perfect winters Lunch is prepared by assorted leafy greens like - pahadi palak, Rai patta, and leaves of Reddish
These leaves are first blanched and then hand grounded to a coarse paste, tempered with Jakhiya seeds (Cleome viscose), Cumin seeds & Asafetida ( Heeng ), cooked with onions, green chillies and handfull of Ginger and garlic
Usually thickened by groubed rice and served with some piping hot sticky Pahadi Bhaat
